Our birds are pasture-raised and rotationally graze through acres of pristine fields. That means: Plenty of bugs and grass, ample room to roam and lots of sunshine and fresh air. (It also means: No antibiotics. No hormones. Nothing eww.)
This year we raised:
BROAD-BREASTED BRONZE TURKEY (15 - 18+ pounds)
Named for its shimmery, metallic feathers, this stately breed has rich flavor and ample white meat.
WHITE MIDGET TURKEY (8 - 15 pounds)
Subtle and succulent, this smaller breed grows slowly — which means, you aren’t sacrificing flavor for manageability.
We harvest the turkeys when they are full-grown but still young. That means their meat is tender and supple. It also means you may find a few pin feathers (either black or white, depending on which type of bird you received) on their skin.
To remove pin feathers:
When your bird is thawed, pinch them off with your fingers, tweezers or needle-nose pliers — whatever you have on hand. Be careful not to tear the skin.
Or — here’s what we recommend — you can leave them in. Roast your bird and remove them (with your fingers, tweezers or needle-nose pliers) when the bird is done cooking. Easy breezy.
